Abstract

This research aims at studying local food of Sanuannok Village, Sanuan Sub-District, Huai Rat District, Buriram Province, and manage to restore a local food of Sanuannok Village. This qualitative study employed an in-depth interview group discussions, community survey, and non-participation observation. The reliability of the data was checked by triangulation method. The main informants comprising of village scholars or seniors who had knowledge on local food in the village, members of the housewife group and general people that lived in this community. Data analysis was done with logical context description and descriptive statistics.

The results illustrated that there were found: food recipes in the community such as Curry dish, soup, a fried dish, a stream dish, Nam Prik and vegetables. Three desserts: Tod Ma, Khoa and Tom Dang are the local identity dessert. Most of this use coconut as an ingredient. The local dish had a relationship with the way of life and the community culture. The managed data were then reviewed in the community forums and chose the local dish. The suitable way to restore a local food of Sanuannok village by cooking food competition. To achieve substantial and sustainable way, should be developing of local food to be a healthy food to reserve a tourist and use various way of restoration of local food for sustainable way.
